We had similar concerns. Some of our equipment use DOS <br>
and the computers that came with the system could only accept <br>
a limited size of hard drive, which you can not buy anymore. <br>
<br>
When a hard drive failed we tried buying old recycled hard drives
but<br>
found they did not last too long. And we could not replace all the
old<br>
computers with a new one since some systems might need an ISA slot.<br>
<br>
The solution we found was to use smaller solid state drives.<br>
That way we could keep our legacy computer. This has worked <br>
so well that we make back ups of the whole drive and copy it on <br>
to another solid state drive. This spare solid state drive can then
<br>
be swapped out when the original hard drive fails. Minimum <br>
equipment down time. Only thing is that the back up work needs <br>
to be done before you have problems. Making regular backups <br>
from time to time helps, that way you do not lose to most current <br>
recipes.<br>

They make them in many sizes and configurations, IDE, SATA, and USB.

For backing up the drive I like to use an IDE to USB adapter and <br>
plug that into the normal desk computer. From there you can<br>
mirror or ghost the drive, or even store it on a remote server and <br>
then copy it to the new spare solid state drive.<br>
